I live in the South where football is king and food is a close second.  Every chance we get, we combine the two!  There is nothing like a huge spread of #gametimegrub and a big crowd gathered to watch the exciting games leading up to the big game next week.  My husband was born and raised in one of the cities whose team is playing, so without naming which, I can tell you we are very anxious for another win for the home team.  One of our favorite things to eat while waiting for a first down is smothered fries.  Alexia Foods helps us do just that with their sweet potato and crinkle cut French fries.

We go way beyond chili and cheese on our fries.  Sticking to our Southern surroundings, we love sweet potato fries (though I make another batch of crinkle cut fries for the few hold outs who only like russets). 

We also love pulled pork and pimento cheese, which leads to the obvious combination of all three.  We may be rooting for the home team on the opposite corner of the country, but we are celebrating in local style!


Although I make my pimento cheese from scratch, I want my game time grub to be easy, so I use commercially made pulled pork along with those delicious Alexia fries.  I found everything I needed at my local Walmart.  The sweet potato  and crinkle cut fries, along with Alexia Onion Rings are in the frozen potato aisle and are really easy to find.


Pulled Pork Pimento Cheese Smothered Sweet Potato Fries

Ingredients
  • 1 bag Alexia frozen sweet potato fries (regular or spicy)
  • 12 oz container bbq pulled pork (you can use beef or chicken, if desired)
  • 1 cup sharp Cheddar cheese
  • 1 cup mild Cheddar cheese
  • 4 oz jar pimentos, reserving half the juice
  • 2 Tbsp chopped green onions
  • ¼ cup mayonnaise
  • 1 tsp lemon juice
  • ½ tsp minced garlic
  • ½ tsp Worcestershire sauce
  • 6 dashes hot pepper sauce
  • ¼ tsp ground black pepper
  • ½ tsp salt

Instructions
  1. Bake the Alexia sweet potatoes five minutes less than the package directions say.
  2. Meanwhile, begin the pimento cheese by combining the cheese, pimentos with half the juice from the jar and green onions in a bowl.
  3. In a smaller bowl, combine the mayonnaise, lemon juice, garlic, Worcestershire sauce, hot sauce, salt and pepper.
  4. Stir the mayo combination into the cheese.
  5. When the fries are done, transfer them to an oven safe baking dish if you want to serve them on something other than the original baking sheet.
  6. Top them with the pulled pork and then with the pimento cheese.
  7. Bake them at 425 degrees for 15 minutes or until the cheese is melted and the pork warmed through.
